This is bananas…no really…
I’m an ice cream fanatic. Always have been and likely always will be (at least to some degree). During my healthy revamp this past winter I switched from ice cream to frozen yogurt. Don’t worry, I still indulge in the real stuff occasionally (the crazy for cookie dough mini mixer at Culver’s, holy sheet) but we only keep frozen yogurt in our freezer. Recently I’ve been looking to different options for healthy fozen treats and discovered this alternative made out of frozen bananas from SophistiMom! Doesn’t it look amazing? Here’s the step-by-step:
- Take 3 large bananas and cut them into one-inch chunks. Lay them out on wax paper and freeze for several hours.
- Once frozen, place them in a food processor and pulse until it takes on the creamy consistency of soft-serve ice cream.
- Add 1 tbsp coco powder and 1 tbsp peanut butter and blend until mixed.
- Serve immediately.
